Baked Bean Soup
4 cups baked beans
1 onion, chopped
3 stalks celery, chopped
1 1/2 cups canned tomatoes
1 1/2 tsp chili powder
6 cups water
salt
freshly ground black pepper
Put 3 cups of the baked beans, the onion,
celery, tomatoes, and chili powder in a large pot with the water. Bring
to a boil, reduce heat, and simmer, partially covered, or 30 minutes.
Mash and beat until smooth or purée in a blender or food processor.
Return to the pot, and add the reserved 1 cup of baked beans. Reheat,
adding s & p to taste
