Cream of
Asparagus Soup
2 lbs Asparagus
2L whole milk
500ml cream
1 large onion chopped
1 handful parsley
1/4 cup dried basil
s& p to taste
-Cut tips of asparagus.
-chop asparagus stems and microwave for 12 minutes.
-purée with 2L whole milk and 500 ml cream, add chopped onion
and parsley.
-add in asparagus tips.
-stir in 1/4 cup dried basil and s&p to taste.
-heat through.
