Tex Mex
Chili
1. saute 1 onion with 3 cloves of garlic and 1 tsp of salt
2. when soft, add 1 eggplant diced
3. when soft, add 3 tsp cumin, 3 tsp italian spice and 5 tsp of chili
powder
4. stir for 2 minutes
5. add 2 green peppers and 2 zucchinni diced, cook until soft
6. add 3/4 cans of tomatoes (mashed up a bit)
7. add 1 small cans of kidney beans, 1 small can of chick peas
8. cook for about 1/2 hour
9. add 1/4 cup of lemon juice and 1 bunch of coriander chopped
