Jamaican Beef Pepper Pot
1 tbsp vegetable oil 15ml
2lb beef stewing cubes 1 kg
6 slices bacon, chopped 6
2 onions, chopped 2
4 cloves garlic, minced 4
1/4 cup all purpose flour 50ml
6 cups beef stock 1.5L
4 cups water 1L
1/4 cup tomato paste 50ml
1tsp dried thyme 5ml
1/2 tsp each s&p
2lb sweet potatoes 1kg
(about 2)
peeled and cubed
1 each sweet red and green
peppers, chopped
1 tbsp wine vinegar 15ml
1 tsp hot pepper sauce 5ml
Brown beef, bacon, onions and garlic.
Add all other ingredients to slow cooker until potatoes are tender.
Add more hot pepper sauce to suit your tastes.
