Three-Bean Lentil Soup
2 tsp vegetable oil
2 onions chopped
2 cloves garlic minced
1 tbsp minced ginger
4 tsp curry powder
1 can 28oz tomatoes
6 cups vegetable or chicken stock
2 cups water
1 each can 19oz ~ chickpeas, black beans, red kidney beans (drained and rinsed)
1 tbsp chopped fresh coriander
1 tsp lemon juice
1.2 tsp salt & pepper
Combine all ingredients and slow cook.
