Sweet Potato Peanut Butter Soup
This soup was a fast favourite for us. It can be served hot or cold and can be garnished with peanuts or green onions.
The perfect starter to a delicate meal!
(makes four 1 1/2 cup servings)
1 3/4 cup chicken stock
1 cup water
1 large yellow onion
2 celery stalks, coarsely chopped
1/2 tsp minced garlic
2 medium sweet potatoes
1 bay leaf
1/4 tsp dried thyme
1/4 tsp hot red pepper sauce
3 tbsp creamy peanut butter
2 tsp white wine vinegar
-cook all ingredients except peanut butter and vinegar
-stir in remaining ingredients, discard bay leaf and puree
-garnish with peanuts or green onions
-serve hot or cold
