Fresh Tomate And Corn Soup
Simply delicious! Served very hot with cornbread fresh from the oven and lightly buttered, your guests will remember it

2 cups chopped ripe plum tomatoes
1 1/2 cups v8 juice
1 cup frozen corn kernels, thawed or 2 ears of fresh, ripe corn, kernelled
2 green onions, finely chopped
1/4 cup chopped green bell pepper
2 tbsp finely shredded fresh basil or 1 tsp dried, crumbled
2 large garlic cloves, minced
Hot pepper sauce (tabasco)
Garnish:
1/4 cup plain lowfat yogurt
chopped fresh parsley or basil
